Easy Egg Roll in a Bowl

Easy, healthy and filling, I love this recipe! You can easily purchase coleslaw mix if you don’t want to chop the cabbage yourself. Additionally, I use the frozen ginger cubes for convenience. You can stretch this meal by using white rice or just omit it entirely, it’s up to you! The coconut aminos give a nice sweet umami flavor and you can find them in grocery stores like Whole Foods or your local co-op.
Easy Egg Roll in a Bowl
Serves 6
Total Time: 20 minutes

• 2 tablespoons canola oil
• 1 large green cabbage, thinly sliced (sub coleslaw mix)
• 1 large onion, small dice
• 3 medium carrots, chopped finely
• 1 pound ground organic chicken or turkey
• 1 inch ginger, grated (I use frozen)
• 3 cloves garlic, minced
• Generous splash of coconut aminos
• Generous splash of soy sauce (or GF tamari)
• salt and pepper, to taste
• sesame oil, drizzle
• chopped green onions, to garnish
• cooked white rice, to serve

Add the oil to a large skillet and heat over medium heat. Add the cabbage, onion, and carrots and season with salt and pepper. Add the meat, ginger, garlic, coconut aminos, soy sauce and cook for 10 minutes. Taste and season with additional soy sauce and/or salt. Turn off heat and drizzle sesame oil. Garnish with green onions and serve atop white rice if you wish.
