Although this side dish only has 5 ingredients, it is bursting with flavor and texture. It’s quick, healthy and uses up those cucumbers from summer CSAs.
Cucumber Salad with Toasted Pumpkin Seeds
Total Time: 10 minutes
• 2 English cucumbers (or 2 peeled cucumbers), halved
• 1/4 cup toasted pumpkin seeds
• 1 lime, zest and juice
• drizzle of EVOO
• pinch of kosher salt
• mint, chopped, to garnish
Cut cucumber into quarter moons. Combine all ingredients and garnish with mint.
