Green Beans with Peanuts, Ginger and Lime

Green Beans with Peanuts, Ginger and Lime
Serves 4 as a side dish
Total Time: 20 minutes

• 1 tablespoon olive oil
• 1 pound french green beans
• ½ large shallot, sliced thin
• 1 teaspoon grated ginger
• 2 garlic cloves, finely grated
• ½ teaspoon ground coriander
• 1 lime, zested and juiced
• ¼ teaspoon sugar
• Peanuts or almonds, to garnish
• Fresh cilantro, to garnish
• Kosher salt and pepper, to taste

Heat oil in a large skillet over medium heat and add green beans. Saute until crisp tender with a splash of water. Add shallot, ginger, and garlic and cook an additional 2 minutes. Add coriander, lime zest, lime juice, sugar, salt and pepper. Top with nuts and cilantro.
