Almond Butter Banana Oatmeal Muffins

almond butter banana muffinThese muffins are SO GOOD. They’re moist, not too sweet, and perfect for breakfast on the go.  They may look a little deflated but what they lack in looks, they make up for in flavor!

Almond Butter Banana Oatmeal Muffins
Makes 7 muffins
Total Time: 25 minutes

• 1/2 cup almond meal/flour
• 1/4 cup oat flour
• 1/4 cup rolled oats
• 1/2 teaspoon baking soda
• 1/4 teaspoon kosher salt
• 1/4 teaspoon cinnamon
• 1 1/2 tablespoons chia seeds
• 1 large ripe banana, mashed
• 1/2 cup plain greek yogurt
• 1 large egg
• 2 tablespoons maple syrup or honey
• 1/2 teaspoon vanilla extract
• 2 heaping tablespoons almond butter

In a medium bowl, mix almond meal, oat flour, rolled oats, baking soda, salt, cinnamon, and chia seed. In a large bowl, mash the banana. Add greek yogurt, egg, honey, vanilla and almond butter. Mix until combined.

Pour dries into wets and mix until combined. Bake at 325F using convection for 14 minutes.
