Black Eyed Peas with Coconut Milk

Serves 4-6 as a side dish

• 1 tablespoon unsalted butter
• 1/2 medium onion, diced
• 1 teaspoon minced peeled fresh ginger
• 1 large clove garlic
• 1/2 teaspoon paprika
• 1/2 teaspoon chile powder
• 1/2 teaspoon turmeric
• 10 cherry tomatoes, halved
• 1 cup coconut milk
• 1 cup dried black-eyed peas, simmered until plump
• salt
• 1/4 cup cilantro
• 1 scallion, sliced
• generous amount of vinegar hot sauce to season

In a large saucepan, melt the butter. Add the onion, ginger, and garlic and cook over medium heat until soft. Add the spices and cook until fragrant, about 1 minutes. Add tomatoes, coconut milk and black-eyed peas and bring to a boil. Simmer over medium low heat for 10 minutes. Taste and adjust salt. Fold in cilantro and scallion and serve with hot sauce.
