Get ready for some of the most delicious green beans of your life. Don’t be scared of the fish sauce, I promise the dish won’t taste fishy and it gives such a great savory, salty flavor!
Girl & the Goat Magic Green Beans
Total Time: 20 minutes
Green bean dressing
1/3 cup fish sauce
1/4 cup lemon juice (juice of 3/4 a lemon)
1/4 cup low sodium soy sauce
1 tablespoon Dijon mustard
1 teaspoon sriracha
3 cloves garlic
1/4 cup olive oil
Green bean aioli
1/4 cup green bean dressing
1/2 cup mayonnaise
3 tablespoons olive oil
2 pounds fresh green beans, tops trimmed
1 shallot, thinly sliced (or sub onion)
handful of whole cashews
Dressing: In the container of a blender add fish sauce, lemon juice, soy sauce, mustard, sriracha and garlic. Start blending and stream in olive oil until combined to a vinaigrette like consistency. Set aside.
Aioli: In a small bowl whisk together 1/4 of the green bean dressing and mayonnaise. This should be loose.
Green beans: In a large pan set over medium high heat add olive oil. Once the oil is hot add in beans, shallots and the leftover green bean sauce. Saute until just soft and add in a handful of the cashews. Serve and drizzle with the green bean aioli.
