Classic Chunky Chicken Salad

• 3 cups cooked chicken, pulled by hand into small chunks
• 4 stalks celery, medium dice
• 1/2 medium onion, medium dice
• handful chopped nuts (optional)

Dressing:
• about 3/4 cup mayonnaise
• 2 teaspoons apple cider vinegar or lemon juice
• 2 fingered pinch cayenne
• 3 fingered pinch paprika
• 1 tablespoon mustard (whole grain brown or dijon)
• kosher salt and freshly ground pepper, to taste
• Parsley, tarragon and/or chives/green onions (optional)

Combine the dressing ingredients in a medium bowl and mix well. Add chicken, celery, and onion and stir gently to combine. Season with salt and pepper, to taste.
