Serves 4

1 teaspoon olive oil
1/2 large onion, small dice
1 1/2 lbs ground beef
2 garlic cloves, minced
taco seasoning packet or (1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon black pepper, 1/2 teaspoon salt, dash cayenne powder)
2 cups water
1 cup salsa
2 cups diced tomato
4 cups pasta (I used Campanelle)
Shredded cheese, to garnish
Optional: Taco accompaniments: Tomato, Salsa, Diced onion, Pickled jalapenos, Sour Cream

Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add onion, when partially cooked, add meat and saute until cooked through, seasoning with salt and pepper. Add garlic and spices and saute until fragrant.

Add water, salsa, tomato, and pasta, cover, bring to a boil, then simmer until pasta is cooked, about 8 minutes. Sprinkle with cheese and garnish with any taco accompaniments.

Don’t make too many leftovers, the pasta continues to soften and the eating experience goes down over time!
