Chinese Chicken in Black Bean Sauce

2 chicken breasts, diced
olive oil, salt, pepper
1/2 large onion, thinly sliced
1 tablespoon rice vinegar
1 bell pepper, sliced
2 cloves garlic, minced
1 teaspoon minced ginger
2 tablespoons black bean paste
1 tablespoon soy sauce
1 tablespoon sugar
1 teaspoon sesame oil

Saute chicken in oil over medium heat. Season with salt and pepper. When chicken is 3/4 cooked, add onions. De-glaze the pan with rice vinegar. When onions are soft, add bell pepper, garlic, ginger, bean paste, soy sauce, and sugar. Remove from heat, add sesame oil and serve with cooked rice.
