Overnight Oatmeal with Chia and Fresh Fruit- 10 day detox recipe

overnight oatmealI’m not the biggest oatmeal fan but this detox recommends eating oatmeal without any added sugar in the morning. This recipe is pretty amazing, but I’m still craving a splash of maple syrup or honey to make it that much more satisfying. The coconut milk creates a really creamy flavor and texture and the chia seeds add an extra textural dimension.

Overnight Oatmeal with Chia and Fresh Fruit
Total Time: 12 hours
Serves 1

• 1/2 cup rolled oats
• 3/4 cup unsweetened coconut milk
• 1 teaspoon chia seeds
• 1 teaspoon vanilla
• 1/2 teaspoon cinnamon (sub pumpkin spice, or add a bit of cardamom as well)
• pinch of salt
• 1/4 cup fresh berries
• optional: pumpkin seeds, coconut, drizzle of pure maple syrup or local honey

Add oats, milk, chia, vanilla, cinnamon, and salt to a bowl. Cover and refrigerate overnight. To serve, either eat cold (like muesli) or microwave for 1 minute and top with berries and/or sweetener, if desired.

If you’re doing no added sugar, add half of the berries to the bowl to soak overnight. When you microwave it the next morning, some of the sweetness from the fruit will leach out. Add the remaining half of the fresh berries on top.
