Healthy Taco Salad with Chicken- 10 day detox recipe

healthy taco saladThere’s no edible fried bowl here. Just lean protein and lots of flavor. Second meal of the 10 day detox. Very easy to make, just lots of chop and assemble prep!

Healthy Taco Salad with Chicken
Serves 3
Total Time: 30 minutes

Taco Meat
• 1 teaspoon olive oil
• 1/2 sweet onion, medium dice
• 1/2 jalapeño, stemmed, partially seeded and minced
• 2 cloves garlic, minced
• 1 lb ground chicken
• 1 teaspoon cumin
• 2 teaspoons ground chipotle pepper
• Heaping 1 teaspoon kosher salt and pinch of pepper

Fresh Salsa
• 1 cup chopped cherry tomatoes (about 20)
• 1/4 red onion, small dice
• 2 tablespoons chopped cilantro
• 1 clove garlic, minced
• juice of ½ lime
• 1/4 teaspoon kosher salt

• 1 lime, juiced (about 2 tablespoons)
• 1/2 teaspoon kosher salt
• 1/4 teaspoon ground coriander
• 3 tablespoons extra-virgin olive oil
• 1 tablespoon chopped fresh cilantro
• 1 teaspoon Dijon mustard

• 10 cups Romaine Lettuce
• Slices of tomato
• 1 1/2 avocado, cubed
• 3 tablespoon chopped sweet onion
• 1 large green bell pepper, medium dice

For the taco meat: Over medium heat in a large skillet, heat olive oil. Add onions and saute until translucent. Add jalapeño and garlic and saute 30 seconds. Add chicken and spices and cook until chicken is cooked through and no longer pink, breaking up chicken. Set aside.

For the salsa and dressing: combine all ingredients in a small bowl until combined. If you want to skip a step, just buy fresh pico de gallo or canned salsa from the store.

Assemble the salad by layering romaine in the bottom of the bowl and top with tomato, avocado, onion, green pepper, salsa, and taco meat. Pour dressing over each salad.
