I adore this recipe. I can’t exactly remember who showed it to me- Trish? Molly?- but either way, it brings up memories of the beach and friends. Super easy to make and satisfies a crowd on a hot summer day! You can make this in a pie version but I prefer a big sheet tray for a group of people.
Frozen Mint Chocolate Chip Pie Bars
Makes one 13 x 9″ pan
Total Time: 5 hours
• 24 whole Oreos, more to garnish
• 1/4 cup unsalted butter, melted
• 1 8 oz. container Cool Whip
• 1 (1.5 quart) container Mint Chocolate Chip Ice Cream, softened at room temperature
Crush oreos into a fine crumb using a food processor. Using a spatula, mix the crushed oreo crumbs and melted butter together. Place into a 13 x 9 pan, pressing the crumbs onto the bottom. Set in the freezer as you make the filling.
Mix Cool Whip with softened ice cream. Remove crust from the freezer and spread onto crust. Freeze for at least 4 hours or overnight. Before serving, remove from freezer for 20 minutes to make it easier to cut. Garnish with crushed oreos.
