Simple Cucumber Salad

Simple Cucumber Salad
Serves 3
Total Time: 15 minutes

• 2 medium cucumbers
• 2 tablespoons rice vinegar
• 1 teaspoon sugar
• 1/4 teaspoon salt
• 1 tablespoon toasted sesame seeds

Peel cucumbers to leave alternating green stripes. Slice cucumbers on a mandoline for thin, even slices. Combine vinegar, sugar, salt and sesame seeds.  Add sliced cucumbers and toss.
