No Meat Lentil Sloppy Joes

These “sloppy joes” contain no meat- and there’s no soy, either! Lentils are the perfect texture for vegetarian sloppy Joes. It may be hard to believe but this vegetarian substitute is pretty tasty! I only had hot dog buns on hand, but that worked just fine.

No Meat Lentil Sloppy Joes
Serves 4
Total Time: 45 min

• 1 cup uncooked lentils
• 1 tablespoon olive oil
• 1 medium yellow onion, diced small
• 1 green pepper, diced small
• 2 cloves garlic, minced
• 1 tablespoons chili powder
• 1 teaspoons oregano
• 1 cup tomato sauce
• 2 tablespoons tomato paste
• 2 tablespoons agave (or maple syrup)
• 1 tablespoon ketchup
• 1 teaspoon Worcestershire sauce
• 1 teaspoon Dijon mustard
• 4 buns- optional, for serving

Put the lentils in a small sauce pot and pour in 4 cups water. Cover and bring to a boil. Once boiling, lower heat and simmer for about 25 minutes, until lentils are soft.

Heat a medium soup pot over medium heat and saute the onion and pepper in the oil for about 7 minutes, until softened. Add the garlic and saute a minute more. Add the chili powder, oregano, tomato sauce, tomato paste, agave, ketchup, Worcestershire, and Dijon. Taste and season with salt. Cook for about 10 minutes until you reach a “sloppy joe” consistency. Serve on buns.
