Late Summer Gazpacho


This gazpacho has fantastic flavor, definitely one of my favorites. It’s incredibly easy- just chop, marinate and blend- it’s the perfect summer soup!

Late Summer Gazpacho
Serves 6-8
Total Time: 8 hours

• 3 garlic cloves, roughly minced
• 1 cucumber, peeled and chopped
• 4 plum tomatoes, chopped
• 2 red bell peppers, cored, seeded, chopped
• 1/2 cup red onion, chopped
• 3 cups tomato juice
• 3 basil leaves
• 1/4 cup sherry vinegar (sub white wine vinegar)
• 2 tablespoons olive oil
• 2 teaspoons kosher salt
• 1 teaspoon Worcestershire sauce

Add all ingredients in a large bowl and marinate for 8 hours. Puree in blender and serve chilled.
