These brownies are fantastic. I would never even know they’re gluten-free! I’d happily make these fudgy brownies anytime, even though I can eat gluten. Remember to wait for them to cool- so they set up properly- before you cut into them.
Gluten Free Brownies (Fudgy!)
Makes 9 x 13 pan
Total Time: 40 min
• 1/4 cup all-purpose gluten-free flour
• 1/4 cup cornstarch
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup (1 stick) unsalted butter
• 1 cup packed light brown sugar
• 1/2 cup unsweetened cocoa powder
• 1/4 cup semisweet chocolate chips, plus 1/2 cup
• 1 teaspoon vanilla extract
• 2 large eggs
Preheat oven to 350F. Spray a 9 x 13 inch pan with nonstick cooking spray. Add dries in a small bowl and mix well.
Melt butter in a large saucepan over low heat. Add brown sugar and stir until sugar is dissolved. Remove from heat, add in cocoa and stir until combined. Add in flour and stir until smooth. Stir in 1/4 cup chocolate chips and vanilla. Add eggs and whisk until smooth. Pour batter into prepared pan and sprinkle 1/2 cup chocolate chips over top. Bake 25-30 minutes or until toothpick inserted into center comes out almost clean.
