Peanut Butter Cake with Peanut Butter Frosting

I’m not a cake person, I like very dense cakes occasionally, but overall, not a cake person- more of a custard-y dessert, pie, and fruit person.  Thing is, I LOVE this cake.  It’s so moist and full of peanut-buttery sweetness.  I could eat the frosting on anything.  This cake is a favorite in our household and a winner at potlucks.  Give it a try, you won’t be disappointed!

Peanut Butter Cake with Peanut Butter Frosting
Serves 12
Total Time: 50 minutes

• 2 cups all purpose flour
• 2 cups granulated sugar
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1/2 cup smooth peanut butter
• 2 sticks unsalted butter
• 1 cup water
• 1/2 cup buttermilk
• 2 large eggs, lightly beaten

Peanut Butter Frosting
• 1/2 stick unsalted butter
• 1/4 cup smooth peanut butter
• 1/4 cup buttermilk
• 1/2 teaspoon vanilla extract
• 2 cups powdered sugar

Preheat oven to 350F. Combine flour, sugar, baking soda and salt in a large mixing bowl. Combine peanut butter, butter, and water in a small saucepan and bring to a rapid boil. Pour peanut butter mixture over the flour and mix to combine. Add buttermilk and eggs and mix. Pour into greased sheet cake pan (9 x 13″) and bake for 35-45 minutes at 350F. Let cool slightly.

For the frosting: Bring butter, peanut butter and buttermilk to a rapid boil in a small saucepan. Whisk in vanilla and powdered sugar until dissolved. Ice the slightly cooled cake.
