Pineapple infused vodka just might extend your summer days. The sweet flavor of pineapple infuses into the vodka creating a fresh, sweet liquor that is perfect for making cocktails or just drinking it on the rocks with soda water and a splash of lime. Additionally, Tito’s vodka is pretty cool. It’s produced in Austin, TX where it’s made in small batches and distilled in an old-fashioned pot still (just like fine single malt scotches and high-end French cognacs) 6 times.
Pineapple Infused Vodka
In a non-reactive container (i.e. mason jar), pour the Tito’s vodka over ripe, cubed pineapple chunks until full. Cover and let the vodka sit for at least 4 days, up to 10 days, out of direct sunlight. The longer it sits, the more flavor is leached out of the pineapple, but at a certain time, an equilibrium between the fruit and vodka occurs so there’s no point in soaking it past 10 days! Open up, drain and enjoy!
