Raw Blueberry and Ginger Pudding

This delicious little pudding is easy to whip up on a hot summer day. I stumbled across the recipe on Alkaline Sisters and decided to give it a try.  We always keep a HUGE bag of frozen blueberries in our freezer to add to ice cream or just to munch on so I figured why not try some in a raw pudding?  The frozen blueberries add sweetness and keep it cold while the avocado makes it creamy and smooth. The ginger and lemon give it a fresh, unique kick that adds to the refreshment of the treat. It’s smooth, creamy, and fruity- Enjoy for breakfast, lunch, dessert or as a healthy snack!

Raw Blueberry and Ginger Pudding

Yield: approx 1 1/2 cups

• 1 cup frozen blueberries
• 1 small ripe avocado
• juice and finely grated zest of 1/2 lemon
• 1 teaspoon freshly fine grated ginger
• 1/4 cup almond/rice/soy milk (use unsweetened or original)
• 1 tablespoon agave syrup/liquid sweetener

Place all ingredients in food processor and whip it well with the S blade.  Adjust sweetness as desired.  Spoon into serving dish and garnish with frozen blueberries.  Since the blueberries are frozen, pudding will become watery as they thaw, thus serve immediately after mixing.
