Pomegranate Champagne Cocktail

Sorry I’ve been so MIA- I’ve been getting my MASTERS!  It’s official, I now have a Masters in Science in Food Science and Technology.  I figured celebratory champagne cocktails would be an appropriate blog post so here it is.   These lovely cocktails are the easiest thing and they look divine thanks to the pomegranate seeds.  The pomegranate juice will make for a girly light pink cocktail but even without the juice, it will look stunning.

Pomegranate Champagne Cocktail
Makes 12 appropriately sized glasses
Total Time: 5 min

1 fresh pomegranate, seeds removed
1/2 cup pomegranate juice, such as POM
2 bottles Champagne/prosecco/sparking wine, chilled

Spoon 1-2 teaspoons of pomegranate seeds into a champagne flute/wine glass. Add 1-2 teaspoons of pomegranate juice and fill each glass with champagne. Serve immediately.
