Healthy Greek Yogurt Ranch Dressing

I was watching Bethenny Frankel on Bravo (oops) and in this particular episode, she was talking to the people who worked for her and how they landed their jobs. This one girl said something like, “and just a few months ago, my friends and I were cooking your recipes, and now here I am.” Wait, what? Oh right, she was a cook before all the reality shows. I was curious to see the recipes she was creating so I looked her up online and started perusing. Although most of her recipes aren’t my style, this healthy ranch dressing caught my eye. I adapted the recipe to suit my own taste but based it off of Bethenny’s. Let me tell you, I am shocked at how good this is. The bold, tangy flavor of Greek yogurt definitely shines through and clearly separates it from a typical ranch, but I love the texture and flavor of Greek yogurt anyway. This dip is thick, luscious, and has all the components of a ranch dressing but without the fat.  The garlic powder and Parmesan really add a flavor punch to this easy, healthy dip.  I’m absolutely in love.

Healthy Greek Yogurt Ranch Dressing
Makes about 1 cup (158 calories/ 6 ish oz)
Total Time: 5 minutes

• 6 oz (1 small container) non-fat plain Greek yogurt
• 1 teaspoon rice wine vinegar (sub any type vinegar)
• 1 teaspoon lemon juice
• 1 teaspoon water
• ½ teaspoon Dijon mustard
• ½ teaspoon low-fat mayonnaise
• 3/4 teaspoon garlic powder
• ½ teaspoon salt
• 1/2 teaspoon fresh black pepper
• 2 teaspoons dried parsley
• 2 tablespoons grated Parmesan

Combine all ingredients and chill before serving.
