Roasted Cauliflower with Cumin

Roasted cauliflower has got to be one of the best snacks out there.  It’s incredibly easy, just like any other roasted vegetable- toss and pop in the oven!  This recipe includes earthy cumin and paprika to give more of a roast-y flavor.  Don’t be afraid to get some color on them!

Roasted Cauliflower with Cumin
serves 4 as a side
Total Time: 45 minutes

• 1 head cauliflower, cut into florets
• 2 tablespoons extra-virgin olive oil
• 1 teaspoon kosher salt
• 1 teaspoon paprika
• 1 teaspoon ground cumin
• pinch of ground pepper
• pinch of crushed red pepper

Preheat oven to 425F.  Line a baking sheet with aluminum foil (for easy clean up).  Toss cauliflower with all ingredients on top of the aluminum foiled pan (why dirty up a bowl?).  Roast 40 minutes, flipping halfway through.

Nutty and sweet, roasted cauliflower is a simple, healthy and cheap dish to make.  Add Parmesan cheese, garlic powder, ginger, curry or lemon juice for added flavor. I think next up I’ll be trying Michael Ruhlman’s Whole Roasted Cauliflower basted in butter.
